Easy Strawberry Marmalade
for 10 portions
Ingredients
100 gr sugar
4 gr pectin*
350 gr fresh strawberries
5 gr lemon juice
50 gr water
10 gr rum
Instructions
Strawberries need to be quickly rinsed, placed on a tea towel and patted dry. In a saucepan, warm the water and strawberries warm to 40°C. Mash the strawberries with a spoon. Mix sugar and pectin together and add to the pan. Stir and skim and cook for 1 to 2 minutes. Then add the rum and lemon juice. Remove from the heat, pour over a glass and keep it in the fridge.
*This dressing is actually a compote but it can be used as a marmalade. The only drawback is that it cannot be preserved for very long. We prefer using it because it has less sugar and it is fresher. You can adjust the thickness and sweetness by adding/reducing pectin and sugar. You will find pectin at the supermarket.
