Danish Dream Cake (Drømmekage)
In 1965, a young girl baked her grandmother’s secret family recipe in a competition and won, and the cake has been a Danish favourite ever since… Enjoy my favourite teatime treat!

Topping
75 gr butter
125 gr coconut flour
180 gr brown sugar
75 gr milk
20 gr glucose
Cook all the ingredients in a pot for 3-5 minutes while stirring. Put the topping aside.
Cake dough
175 gr flour
200 gr sugar
2 teaspoons baking powder
230 gr warm milk
55gr coconut oil
2 eggs
½ lime or lemon zest
In a bowl combine all the dry ingredients. Add the milk and mix well. Add the eggs and in the end, the oil. Bake at 160°C for 20 minutes. Remove the cake from the oven and carefully spread the topping all over the cake. Bake again at 180°C for 10 minutes until the topping is caramelized. Take out and let the cake to cool before you remove the form. Serve with ice cream or crème fraiche.
