Healthy Granola with Honey
for 15 portions
Ingredients
1350 gr organic oats
25 gr hazelnuts
25 gr almonds
20 gr cocoa nibs
120 gr coconut
175 gr sunflower seeds
50 gr pumpkin seeds
50 gr sesame
300 gr honey
75 ml coconut oil
Instructions
Toss together the dry ingredients. We’ll save the coconut for later. Whisk together the melted coconut oil, and honey. Then drizzle it over the dry ingredients and give everything a good toss until it’s evenly mixed. Spread the mixture out evenly on a large parchment-covered baking sheet.
Bake at 170°C until golden brown. Mix well in the oven every 10 minutes, so the granola that is on the sides of the tray doesn’t get burnt. After 20 minutes, sprinkle the coconut evenly on top of the granola. (We’re doing this so that it’s just lightly toasted and doesn’t overcook.)
When ready, wait for about 20-30 minutes, or until the granola has completely cooled to room temperature. Then use a spoon (or your fingers) to break it up into your desired size of clumps.
Serve
You can either serve the granola right away or transfer it to a sealed container, where it can stay preserved for up to 1 month. The way I like to serve it is with Greek yogurt, apples and mint.
