Easy Brioche Buns
for 4-6 persons
Ingredients
400 gr flour
2 dl milk
20 gr yeast
1 egg
60 gr sugar
5 gr salt
60 gr butter (in refrigerator temperature)
Instructions
In a mixer bowl add flour, yeast, egg, sugar and salt. Start the mixer and slowly add the cold milk. Then mix in the high speed for 5 minutes. Add the cold butter that you have cut in small pieces, and mix well until the dough is elastic- about 5 minutes. Then take the dough out of the mixer, cover it with film and let it rest in the fridge for 1 hour.
Remove the dough from the bowl and place it on your working surface. The dough will be soft. Use flour if it is very sticky. Shape into balls of 80 gr, cover with a towel and let them proof at room temperature, until doubled in size. Preheat the oven at 165οC, set to fan.
Tip
For our dough to proof faster, preheat the oven to 50 °C with fan, then turn it off. Before we put the buns in the oven, sprinkle with water so they will not get dry. This way, they will double in size faster.
Brush with egg yolk and bake for 10-15 min (depends the oven), until golden.
